Wings on the BGE covid-19: day 63 | US: GA | info | act

I’ve been craving wings for a few days, so tonight I decided to satiate that craving. Last time I cooked them low-and-slow (at about 200°F), which I think was too-low. I think 225–250°F is about right. Yet, I wanted to try a faster cook this time, so I set the BGE’s temp at 425°F and used the convEGGtor. I seasoned the wings by brining them in pickle juice for a couple of hours and then sprinkling them liberally with a rub I have in the cabinet. I cooked them, in total, for about 45 minutes, turning them every so often near the end. I think the convEGGtor helped keep them from burning, though I might have left them in a bit long.

I sauced them with my homemade Slayer sauce: fresh garlic, butter, Texas Pete, and cayenne. I use a stick blender to emulsify it. Here's the final product.

They were pretty good, but I think I really just wanted extra-crispy, deep-fried wings from Wild Wing. Maybe this week.

It was four years ago around this time that David was killed. I still miss him all the time. I can’t listen to Steely Dan without thinking about him, particularly “Any Major Dude Will Tell You” which pops up on Yacht Rock form time to time. I’m not certain why I associate that song in particular with David—I never even remember discussing it with him. It just seems to fit.

To commemorate, I’m going to do my Pine Mountain Ride on Sunday, even though the day is supposed to be hotter. I invited Giles, but even if he can’t do it, I’m riding for David.
