We’ve had some good luck with crock pot recipes lately — like the Mississippi Pot Roast[1] and the Chicken and Dumplings[2] — so I’m trying Slow Cooker Chicken Marsala tonight.[3] It’s really pretty great to throw some stuff in the crock pot and have a great meal by dinner time. We’ve been enjoying this type of cooking so much, we’re thinking about getting an Instant Pot that all the kids are raving about. Let’s see if this is just a phase.

Notes

  1. Similar to this recipe, except I used pork shoulder and forgot the butter. It was still damn good.
  2. Similar to this recipe, except I added mushrooms I had left in the fridge and a bag of frozen peas. It needed more chicken; we only used two smallish breasts.
  3. I’m using chicken thighs instead of breasts, since they were on sale, and I added more mushrooms, since they were also on sale and I like mushrooms.
